FINNISH CHRISTMAS CAKE
Finsk julkaka
1 1/4 cups strong coffee
1 1/4 cups raisins
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground bitter orange peel
1 1/2 tsp ground ginger
7 oz margarine or butter
2 eggs
1 1/4 cups sugar
good 2 1/3 cups flour
1 tsp bicarbonate of soda
Grease and flour a baking dish, capacity about 8 cups. Heat the oven to
350F.
Pour the coffee in a saucepan, add raisins and spices and bring to a boil.
Remove saucepan from heat, add fat and stir until it melts. Allow to cool.
Beat eggs and sugar until fluffy and mix in the coffee mixture. Last, stir
in flour mixed with bicarbonate of soda. Pour the batter in the dish. Bake
on a rack in the lower part of the oven for 50 - 60 minutes.
This cake tastes best if you leave it alone for a few days before cutting
and eating it. In a jar or a plastic bag it keeps for about a week, in the
freezer for about 6 months.
