About ½ pound of pasta ( penne, cavatappi, elbows ,etc)
¼ cup mascarpone
About 1 cup of grated Parmesan or pecorino-parmesan mix
1 Tablespoon olive oil
¼cup bread crumbs (panko is great)
Garlic or sage or parsley
Cook the pasta in salted boiling water.
Put the mascarpone and grated cheese in a bowl.
Heat the olive oil in a small skillet with the garlic or sage. Remove the garlic. Add the read crumbs and stir for a few minutes until golden and crispy.
Drain pasta and pour over cheeses. Stir. Serve. Sprinkle with bread crumbs. Serve with a salad or sautéed broccoli or grilled asparagus or peas…..
